Some people say it's better to eat everything raw, because it is more natural and saves more vitamins and minerals. On the other hand, some vegetables are hard to digest without exposing them to a heat or treating them some other way.

So, many people eat raw. There are some obvious dangers of cooked foods, especially when it comes to over-cooking. Killing valuable substances cannot be good. Killing bad bacteria and parasites in meat is obviously good. So, the answer to previously mentioned questions isn't easy. In any case, the best thing to do would be finding the right balance.

Lately, it's quite popular to eat raw because it is a good way for losing weight. Vegetables don't have many calories, and, in their raw state, you cannot eat so much. When you cook them, it is possible to consume more, and, in this case, you will probably have to eat much more to get the same amount of nutritive substances.

When it comes to vitamins, some get destroyed by heat, while some lose just a portion of their value. For example, cooking will certainly destroy every single trace of vitamin C, while some other vitamins, such as B group, won't be lowered too much. Minerals, on the other hand, won't be affected very much. So, it depends. But, if you over-cook your veggies, it is an entirely different situation.

Some other substances, such as enzymes, won't survive the heating process. And this is a shame because they are quite valuable. Some veggies may be cooked, steamed or baked and still remain really valuable, for example, tomatoes and carrots. Beta-carotene in carrots needs some heat to become useful. But, you should still choose alternative techniques, such as steaming.

When it comes to fruits, you should certainly avoid cooking, or steaming or any other food processing. They are the best in their raw state. Of course, if you enjoy in marmalade, make it. Simply slice your fruits, add sugar and leave this mixture rest. After that, cook on low heat for a couple of minutes and that's it. This will save most valuable ingredients intact.

Fermented foods, for example, sauerkraut, are something else. You can also use sprouting, drying, or some other techniques of preparing different types of foods. If you really have to use heat, use the low heat only, or steam your foods. Whenever you can, eat freshly picked, organically grown foods. They contain more nutrients and carry so-called living energy.

The most dangerous thing that cooking does is the fact that it alters different compounds, sometimes even making them carcinogenic. Some experts say that eating over-processed foods is the main reason for many allergies, among other health issues. The best advice would be to eat fresh mostly, and lightly cooked or steamed every now and then. Finding the good balance is the best thing you can do for your health.
